Man, DA really hates accent marks. My apologies, in advance, to any Chinese (Mandarin) speakers if I butcher this. 
'I love you' in Mandarin is 我爱你 and is pronounced (wǒ ài nǐ).
I have yet to watch the entirety of this movie; I either get distracted or fall asleep. From what I gather, Shang doesn't seem completely in love with the idea of Mulan being a woman, just my opinion. The majority of what I know about this movie comes from Kingdom Hearts II and that world was just something to get through to go to Olympus Coliseum.

You should definitely watch the full film. It's one of Disney's best and just a great animated film.
(Spoiler: Shang does start showing interest in Mulan toward the end but was original upset over being tricked. You'll have to watch the movie or read a synopsis.)
